During the process of posing my two main protagonists I notices that, like the blend shapes, the joint controls aren't apparent. there is a section under animation editors called 'Human IK' where I could select the joints using this system:

This allowed me to locate the joints and manipulate them being as though there aren't any controls to the rig.
But the issue is that these aren't actual controls as it were, there is no IK or FK handles which made for some very dodgy manipulations.
It wasn't until I switched the source from none to Control Rig. This brought up all of the handles that were bound to the character that also included IK and FK handles

This allowed for proper control over the rig. It was quite hidden away which is why I am documenting this process as it became apparent that no matter which method you go down wether it be have someone create a rig for you or you generate one yourself there will always be subtle to major differences in the way they are constructed and its a matter of learning every possible way to then troubleshoot in the future. It worried me at first as I thought I would have to do some very strenuous animation that wasn't using IK or FK but am glad to finally have found out where they were hiding!
